PRAWNS IN SPICES

500grms Prawns
1tin Coconut Milk
1 Lemon Rind
1 Lemon Juice
1 Tablespoon Soya Sauce
1 Teaspoon Shrimp Paste
! Tablespoon Leeshack Extra Virgin Olive Oil
1 Onion
6 Spring Onions
4 Chillies
1 Tablespoon Honey

Peel prawns, put onion and garlic in a wok and stir-fry until tender.
Add chillies, soya sauce, lemon rind, lemon juice, shrimp paste and coconut cream,
mix together. Add prawns then the honey and some spring onions.
Taste to see if you need more honey or lemon juice.
Service with rice and sprinkle the rest of the spring onions on top.
